This was so good, it deserved it's own post.
My friend brought over a stuffed beef tenderloin last weekend. It was a spur of the moment kinda thing. I was scrambling to come up with something to go with it. Didn't have any fresh veggies except the red potatoes..........and one lone peach. Hmmm.....dessert.
Been wanting to do a peach on the grill. Didn't have any ice cream. But, had a tad of cream cheese in the fridge. Mixed it with some sugar. Didn't measure, just tasted until it was sweetened. Cut the peach in half, and removed the pit. Used a spoon to make a little bigger divot.
Made up a quick caramel sauce. Most recipes on the internet are for salted caramel sauce. This one is not. Didn't add any salt, and used the vanilla almond milk. Got a little darker than I wanted, but didn't taste burnt. Keep an eye on it.

Grilled the peach pit side down first. Make sure you use some sort of oil to keep from sticking. They did anyway. When I flipped them over, I added the cream cheese filling. They started to bubble around the skin and the cheese just started to melt. Pulled them off, and drizzled them with the caramel sauce. A little more sauce than necessary, but we shared this and had plenty. Both agreed another would have been nice.
