    This was so good, it deserved it's own post.

    My friend brought over a stuffed beef tenderloin last weekend. It was a spur of the moment kinda thing. I was scrambling to come up with something to go with it. Didn't have any fresh veggies except the red potatoes..........and one lone peach. Hmmm.....dessert.

    Been wanting to do a peach on the grill. Didn't have any ice cream. But, had a tad of cream cheese in the fridge. Mixed it with some sugar. Didn't measure, just tasted until it was sweetened. Cut the peach in half, and removed the pit. Used a spoon to make a little bigger divot.

    Made up a quick caramel sauce. Most recipes on the internet are for salted caramel sauce. This one is not. Didn't add any salt, and used the vanilla almond milk. Got a little darker than I wanted, but didn't taste burnt. Keep an eye on it.

    Grilled the peach pit side down first. Make sure you use some sort of oil to keep from sticking. They did anyway. When I flipped them over, I added the cream cheese filling. They started to bubble around the skin and the cheese just started to melt. Pulled them off, and drizzled them with the caramel sauce. A little more sauce than necessary, but we shared this and had plenty. Both agreed another would have been nice.

    Wow Ray! I'm not a sweets person but I'd dig into that fo sure! Looks really, really good!!!!!!

            I'm with Bobbie, not a big sweats person but that picture makes me want to get a fork in each hand and get the hell after that dish!

                  Nice job Ray! I remember when Becky turned me onto the peach parade and they are awful good off the grille. I just did mine plain with some BS and served with vanilla IC. Your remind me more of the ones Sweet Mags did which i have always vowed to try but never have. Yours are right there man. Gotta give you some peach man!!!

                    Looking good Ray, did you try any pears yet?? Don't forget the dry mustard.
                    Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
                    My best asset however is the inspiration from the members on this forum.

                        Thanks folks. It did turn out great for a last minute idea.

                        For those not into sweets, you don't have to overly sweeten the cream cheese. I didn't. And you could skip the caramel sauce, or use less. It would still be great. Definitely worth doing again.

                            Very nice and I bet extra yummy done on the grill. I do something similar but bake them in the oven.

                              I have done peaches before. It's hard to get ones with flavor. You gotta let them ripen and hope they don't taste like cardboard. Depends where you live and the time of year. In Vegas it's a crapshoot, unless I go premium shopping prices. Not driving 30 min each way to a top store.

                              Done right, as RoudyRay has is a wonderful, creative dish. Great idea using Cream Cheese.
