Usually use the Chargriller for this but this batch was almost too big for the Longhorn...
Cut open and waiting...
This is the setup I use to smoke the peppers...Using Stubbs briqs because they are so reliably slow and steady...No funky smells...Just mellow and predictable heat...This setup ran for 4.5 hours and never went above 107 degrees...Chunks of pecan wood to add the smoke...
After the coals burn out its time for the dehydrator...5 full trays...
Tomorrow they will be dry and crispy...Stored in airtight containers to be ground when needed...
