  • Cantonese Lobster

    Grabbed up a live lobster @ the somewhat local H mart.

    Hacked it into quarters and seperated the claws.



    dredged these pieces in corn flour then into a couple inches of oil in the wok. oil poached these pieces until the shell turned red.



    tender meat was lightly coated with a fine breading. nice.

    Held this off to the side and removed most of the oil, then stir fried ginger and garlic,then bok choy then added some cooking wine, cooked that off, and then a corn starch slurry to finish.

    wife ate the head and body segments me and shay concentrated on the tail and claws..



    good stuff served with some galbi short ribs.

    Just because you welded some shit together doesnt make it a WSM.

        Awesome Jim, I really love the Asian recipes you make. This one looks really good as do the short ribs as well!

              yep, about an hour each way from my house, but a regular stop. I was hoping for some blue crabs or a dungeness, but the lobster worked, especially @ $5.99/lb.

                            Very impressive, Jim! I am not a huge fan of Asian food or lobster, but if you sat that down in front of me I would definitely give it a try.

                              made another pass at this "oil poached" lobster on Saturday. Think I had a female this time with the roe..
