  • 4th Mini Meatloaf

    Well after a 3 hour nap early Saturday morning.....and nothing burned down.....figured I better get lunch started.

    Took 3 lbs. of ground beef and mixed it with eggs, bread crumbs and chives. Made six 1/2 lb. loaves. Mixed a little brown sugar and ketchup and basted them at the end. These are perfect for me. I can vac and freeze them for another time. With a couple of sides, it's just right.

    While I was making the meatloaf, I had some taters in the smoker. Erain did some like this at the gathering. Had to give it a shot. Sliced taters, 1 medium onion, 1 can cream of mushroom, 1 can cream of celery, handful of parmeson and an 8 oz. package of mozzarella. They don't real pretty, but they taste great.

    Along with some asparagus, it was a great 4th of July lunch. Thanks for checking it out.
