  • Hatch Elk Jerky

    So I made this a little bit ago but have been lazy about posting results. As per your suggestions, I grabbed some hatch chilies from Albertsons and roasted them on the grill. I let them cool and peeled them. Then I chopped them up real good and left the seeds. I don't know if leaving the seeds helped or not
    The chilies I bought said they were hot but they were next to the mild ones and I couldn't tell a difference by looking at them. When I tasted a few pieces after grilling they were not hot at all but after chopping and then dippin a little scoop it was very hot! I think what happened was that 1 of the 4 chilies was hot LOL

    Oh well. The flavor was good but I would have been happier if they were hotter. Here's some pics.

                Thanks guys. Nothing beats deer and elk jerky. I like deer better for jerky honestly but elk for steaks better.

                As stated, there was actually very little heat. I believe I got one hot pepper out of 4 so every now and then a piece has more heat. The flavor is still good though. Is there a way to tell if they are hotter by looking at them?

                Hey brother! I always cold smoke my jerky before drying it. Those racks go in my wsm Then I take them off and put the meat on the plastic trays in the dehydrator.
