I made of pot of beef stew last weekend and brought the leftovers home to make a pot pie later in the week. Started with a little under 3 lbs of stew meat. Seared the meat in 2 batches in my DO. Added all the meat back in the pot, about 3 cups of beef broth, 3 potatoes diced, 3 carrots cut to 1/2", 2 celery stalks cut to 1/2", 1 onion diced, 1 can of diced tomatoes and a good amount of black pepper, basil and thyme. Let it simmer until the meat and veggies are tender then I mixed up a little flour and the broth and added that. Let simmer until thickened. It was good on a chilly night!

I had also baked some Pillsbury biscuits.
Took the leftover beef stew a few days later and heated it up. I used Pillsbury pie crust that you find near the biscuits at the store (not the frozen crust). I pre baked the bottom crust for about 10 minutes in a 9" cast iron skillet. I never spend much time trying to get a pretty seam with the bottom and top crust, but I always put a little message on the top crust for my old man...yeah, you can laugh if you want. Then I baked it until the top was done and brown. The filling was nice and thick when done.
