      That's the kind of work I'd like to do everyday Jim.
      Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
      My best asset however is the inspiration from the members on this forum.

        Nice. The gouda and Havarti should be good. Doesn't matter what brand I've tried, they've been good. The cheddar and jalapeno jack varies. The cheap stuff stinks. You've got a good brand. Let us know how it turns out.

          Yeah! But..wait to try it is what ya should do. A couple weeks min. It really ages VERY well. Be patient!

            It all looks good. Once you open them in a week or two, let us know how they turned out.

            What kind of wood smoke? How long? What were the temps?

                Gonna be good! I can never wait 2 weeks!!!

                I like to vac pack a little package for "testing" after aboot a week..... Worth the wait though, if you can

                    It was in the high 30's here yesterday when I smoked so this stuff smoked at about 45 degrees for 3 hours,then I left it in the smoker while we did some shopping. The gouda is excellent right out of the smoker.

                          Tillamook pepper jack is our favorite! Smoked dill Havarti is awesome, especially with homemade lox!
