Got this idea from Eraine a couple of weeks ago. I bought half of one of those "football" hams as Bear calls them. Like him, I usually don't buy them because I don't care for the rind but this was on sale and I had these potatoes on my mind.
I scored the top of the ham and smoked until it hit 140 IT then let it rest until cool enough to handle. I sliced a few pieces, cut off the rind and then diced it. OK, so I don't really have a recipe here but did something like this...sliced about 4 potatoes in about 1/4" or so slices. Mixed a little half and half and a little milk with a couple tablespoons of flour in my 10" DO. Added the potatoes, ham, 2 cups of Colby Jack shredded cheese and a good amount of salt and pepper. I let that bake with 7 coals on the bottom and 13 on top for about an hour. I was also smoking some rib trimmings that I found at the grocery for cheap and a few chicken thighs. Potatoes with the ham turned out really good but I'm going to work on the recipe and maybe add a little onion and who knows what else.
Also had some applesauce but took this pic before it made it on my plate.
