I gave this a try last month because it was done at everydaydutchoven.com in a 12" DO and a couple folks didn't think it could be done in a 10" without cutting back on the recipe...so you know me...I had to do it to show otherwise.
Recipe is straight off a box of Duncan Hines Pineapple Supreme cake mix. I used my 10" deep DO.
Topping
1/2 cup (1 stick) butter, melted
1 cup firmly packed brown sugar
1 20 oz can pineapple slices, drained, juice reserved from can
Maraschino cherries (optional)
Cake
1 package Duncan Hines Pineapple Supreme 10.25 oz cake mix
1 3.4 oz package vanilla instant pudding and pie filling
4 large eggs
1 cup water OR juice saved from can of pineapple slices
1/2 cup oil
I melted the butter first and then added the brown sugar and poured into my DO (I used a parchment paper liner this time). The pineapple slices and cherries went in next. Then I mixed up the cake mix ingredients and poured over the pineapples. I baked it around 350 with 7 coals on the bottom and 13 on top for about an hour...you just have to watch it. I let it rest for just a couple of minutes then flipped it out. I thought it turned out so pretty except that one cherry in the very middle pineapple was out of place.
Cake was thick, very moist and tasty....it CAN be done in a 10"!
