  • Schnitzel Wiener Art mit Kartoffelsalat

    ...a meal served in every Gasthaus in Deutchland

    Trimmed a pork tenderloin, quartered it, pounded the filets flat, dredged in flour, egg wash, and bread crumbs (2) and cracker crumbs (2):



    Fried over a R.O fire in a cast iron chicken fryer (in the rain):



    Served simply with SWMBO's warm Kartofellsalat, lemon wedges, salt and pepper:

    Bless you! Actually I am aware of the Schnitzel style... Italians call it a scaloppini, roughly. Yummm... impressive outta Bama. Who'd a thunk?

      Great point. Scaloppine Milanese was my fav when stationed in Italy. I imagine all Europeans have a version.

        One of the best things about this country is the melding of the foods from all over. And the true dishes being preserved. I have been blessed with several from my Italian as well as Hungarian sides. And I am teaching my children, and now God willing..my grands...

                      looks good

                      I grew up in germany and was practically weaned on kartoffelsalat (and bockwurst)- pretty and tasty as that looks - it sure isn't a kartoffelsalat

                        Huntsville Alabama is where they brought the Germans to build the Saturn V rocket to go to the moon. We have a fairly large German community here. Won't the German lady who gave us the recipe be surprised when I tell her that her recipe is not Kartoffelsalat. LOL

                          Looks wunderbar!! I actually had an old italian guy tell me one time that they used to make veal parmesan on special occasions, but they would substitute pork for the veal for the kids because of how expensive the veal was. I have done this before and it's fantasic, basically schnitzel finished of with some sauce and mozz. AS tender if not more so than veal!

                          That looks like the kartoffelsalat that my from Germany friend makes, he maybe cuts potatoes a little smaller...

                            Looks great. I make a similar dish Tunkatsu. It has panko bread crumbs.
