  • Biscuit Recipe Request

    Well, I have another recipe request from the family. My 8 year old daughter, Holly, would like to know if anyone has a good biscuit recipe.

    Of course Mom or I will do the cooking but we'll probably let her help make the dough.

    You folks are getting quite a reputation around the house as a good source for recipes after the bread pudding recipes -- which were excellent by the way.

    Give these a try. I like them with the cheese.



    Buttermilk Biscuits
    2 Cups flour
    1 tsp salt
    4 tsp baking powder
    ½ Cup shortening (I use 1 stick of margarine)
    1 beaten egg
    1 Cup buttermilk (approximately)


    Preheat oven to 400 degrees. Mix together flour, salt and baking powder. Cut in shortening with pastry blender. Add egg and buttermilk (you can add a little buttermilk if the dough seems too dry. Turn out on floured board and knead several times until flour is worked in to make a fairly soft dough. Pat out to about ¾ inch thick and cut into 3 to 3 ½ inch biscuits. Bake for approximately 20 minutes (checking after 15 minutes) and the tops are golden brown.

    PS: You may add 1 cup grated cheddar cheese at final mixing stage.

            I printed it and handed to my wife and said "This is from Bassman."

            And she says, "Batman?"

              I have been accused of being a little "batty" on occasion. I don't mind being Batman, I just don't want to hang around that little fairy that wears tights (Robin I think the name is).

              Hope you like the biscuits. They go real good with sausage gravy, too.

              Lynsey, they should be great with CB.

                LOL, yeah I watched them growing up. As an adult, come to think of it, his outfit does seem a little fruity.

                  Heres my biscuit recipe thats a hit where ever I go.

                  Set your oven to 400 degrees Fahrenheit and spray cooking sheet with non stick spray. I also line my with parchment paper to keep the bottoms from over cooking.

                  Dump into a bowl 2 cups of buttermilk biscuit mix. I use a Jiffy Buttermilk and its like 60 cents for a box. 1/2 teaspoon of garlic powder, and 1 1/2 cups of shredded cheddar cheese.

                  Stir everything together dry first.

                  Pour in about 2/3 cups of buttermilk (reg milk will work also) Stir until combined.

                  Now this mix will get pretty thick so you can add more milk if you need to. Use the 2 spoon method to drop lumps of the dough on your cookie sheet.

                  Now place in the oven for 10 minutes. Now you can at this time melt 3 tablespoons of butter and add some garlic powder to it. About 1 teaspoon. After brushing the biscuits put them back in the oven for 5 to 6 minutes or until lightly brown on top.

                  Now myself I like to use straight butter at the end to brush on, then sprinkle
                  the tops with some garlic powder.

                  I have added the butter both ways but I like it done at the end. Seems to have a more butter flavor that way. Or you can do it twice also. I found adding garlic powder to the butter it seem to get gooey.

                    here's my Mom's recipe

                    Momma’s Buttermilk Biscuits


                    2 cups all-purpose flour
                    2 teaspoons baking powder
                    1/2 teaspoon baking soda
                    1/2 teaspoon salt
                    1/4 cup shortening
                    3/4 cup buttermilk


                    Directions
                    1 In a bowl, combine the flour, baking powder, baking
                    soda and salt; cut in shortening until the mixture
                    resembles coarse crumbs. Stir in buttermilk; knead dough gently.
                    Roll out to 1-inch thickness. Cut with a 2-1/2-inch,
                    biscuit cutter and place on a lightly greased baking sheet.
                    2 Bake at 450 degrees for 10 - 15 minutes or until golden brown.
                    Yield 10 biscuits

                        For something different might try one of these my wife has laying around;

                        Bojangles Biscuits

                        2 cups self rising flour
                        2 teaspoons baking powder
                        2 teaspoons confectioners sugar
                        1/2 cup solid vegetable shortening (such as Crisco)
                        1−1/2 cups buttermilk
                        Melted butter (about 1/4 cup)
                        Stir together the flour, baking powder & 10x sugar. Cut in the shortening
                        until pieces are about the size of grains of rice. Stir in the buttermilk.
                        Knead a few times, roll out on a floured board or counter top to 3/4−inch
                        thickness. Be careful not to work dough too much or add too much flour, or
                        you'll have dry biscuits. Cut with an oversized biscuit cutter (about 3−
                        inches). Place on an ungreased cookie sheet and bake about 12 minutes in a
                        preheated 450 degree oven.


                        Hardee's Buttermilk Biscuits
                        4 cups self−rising flour
                        1 tbs. sugar
                        1 tbs. baking powder
                        2 cups buttermilk
                        2/3 c. shortening
                        Mix together, but do not knead. Roll out to 1" thick.
                        Cut and brush tops with additional buttermilk.
                        Place on greased cookie sheet.
                        Bake at 400 degrees for 15 minutes


                        KFC Buttermilk Bisquits
                        1/2 Cup Butter
                        2 1/2 Tablespoon Sugar
                        1 Egg, beaten
                        3/4 Cup Buttermilk
                        1/4 Cup Club soda
                        1 Teaspoon Salt
                        5 Cup Bisquick biscuit mix
                        Preheat oven to 450 degrees F. Combine all of the ingredients. Knead the
                        dough by hand until smooth. Flour your hands. Pat the dough flat to 3/4−inch
                        thick on waxed paper. Cut out biscuits. Bake for 12 minutes or unitl golden
                        brown. Makes about 18 biscuits.


                        Pillsbury Crescent Rolls
                        2 pks. Active Dry Yeast
                        3/4 cup Warm Water (105 degrees)
                        1/2 cup Sugar
                        1 teas. Salt
                        2 large Eggs
                        1/2 cup Shortening
                        4 cups Unbleached Flour
                        Butter Or Regular Margarine, Softened
                        In a large mixing bowl, dissolve the yeast in the warm water. Stir
                        in the sugar, salt, eggs, shortening and half of the flour into the
                        yeast mixture.
                        Add the remaining flour blending until smooth. Scrape the dough from
                        the sides of the bowl and cover with a cloth dampened in warm water.
                        (The cloth should feel wet, but not be so wet that water drips onto
                        the dough.) Let rise in a warm place (85 degrees F.), until doubled,
                        about 1 1/2 hours. Divide the dough in half, rolling each half into a
                        12−inch circle 1/4 inch thick. Spread with the soft butter and cut
                        each circle into 16 wedges. Roll up each wedge beginning at the
                        largest end. Place, point side down, on a greased baking sheet. Curve
                        to form crescents. Cover and let rise until double, 1 hour. Preheat
                        the oven to 400 degrees F and bake for 12 to 15 minutes, or until
                        they are a rich golden brown. Brush with soft butter.
                        Makes 32 crescent rolls.


                        Popeye's Biscuits
                        4 Cups Bisquick
                        4 Ounce Sour Cream
                        1 Cup Club Soda (room temp)
                        1 Stick Margarine
                        Preheat oven to 375 degrees. Mix bisquick, sour cream and club soda
                        together. Pour onto floured surface and knead very lightly.
                        Roll out to about 1/2" thickness and cut with cutter. Melt butter and pour
                        half into a glass casserole dish. Place biscuits in dish and pour remaining
                        butter over top of biscuits.
                        If you would like to use less butter, do not put butter in bottom of the
                        pan; just pour a little over the top. Also, make sure that the club soda has
                        never been refrigerated and still has a lot of fizz.
                        Bake at 375 degrees for about 20−25 minutes or until golden brown.

                            Yup, I hear ya on that plan. problem is, I am yet to implement it. Got these crazy recipes in binders and 2 different computers.

                              David, now get us the recipe for Bojangles sausage gravy. I always wanted to try Bojangles sausage gravy on Popeye's biscuits. The only thing worth eating at Bojangles is their biscuits and gravy.
