  • Apple upside down cake!

    My mom has a great recipe for pineapple upside cake, it's requested all the time, but I wanted to use up some apples I had. So I used the same recipe just swapped out the pineapples for apples...I can't wait for sour cherry season next year!!

    Kind of looked like corn bread just out of the oven




    I made this once before...I can't wait for this tomorrow!!!

                    Apple upside down cake!

                      Pineapple upside down cake

                      In a large cast iron frying pan melt 1/4 cup butter, add 1 cup brown sugar and
                      1 can pineapple rings put maraschino cherries in the center of the rings.

                      Batter- 1 cup flour
                      1 tsp.baking powder
                      1 pinch salt
                      1 cup sugar

                      3 eggs-
                      (put whites in a bowl to beat until soft peaks form}
                      5 tablespoons pineapple juice. add 3 egg yolks
                      mix into dry ingredients
                      Beat egg whites and fold into mix/

                      Bake 350 degrees 30 - 35 minutes

                      For apple, just slice down a couple of apples, I used to fairly large Granny Smith. Sub apple
                      Juice or cider for pineapple juice...I know some people use a boxed cake mix for the batter, but this recipe tastes ad eats better. I think our skillet is an 11 1/2 inch so it's a nice fruit to batter ratio with the cake part being only maybe an inch and a half thick...I can't wait to try this with fresh tart cherries come June. You could even use bananas and sub rum for pineapple and it would be like an upside bananas foster cake (potentially, I'm just guessing)...
