  • Having a little fun making candy...

    One of my favorite courses I have taken in culinary school is working with chocolate. I think I like it ALMOST as much as I like smoking meat. It's not the easiest, or the cleanest thing to do but it is rewarding. I spent the better part of yesterday preparing two batches of candies like in the picture below. That's not all of them, just a few plated. That is 23k edible gold on top of the heart shapes and edible cocoa butter on the others. The hearts have three different fillings: maple/walnut, orange cream and peppermint cream. The other has sea salt caramel. Gonna get started on some hazelnut truffles in a bit. Not quite as messy.

    I would not expect anything less from you! Once again a wonderful display of talent! Anytime you get bored and want to come to Dayton and cook for me my door is open! Wow great chocolates!

          Looks awesome Cheryl!! Mom always makes candies for Xmas, love the stuff. She says she's not making any this year but she's been saying that every year. I'm gonna try it this year cause I want to pass along the memories for my kids. So if you know of any websites for molds or recipes I would greatly appreciate it.

            Ryan if you think this is something you'll do every year then spend the bucks and get the good molds. I have several of the magnetic molds so that I can use the transfer sheets.

            You can buy cheap, plastic molds, but they are very frustrating in my humble opinion.

            If you don't want to make your own fillings from scratch you can get some quality ones here:

            They are pretty easy to make, but time consuming. Here's the caramel recipe I use:

              I'll take a look at them when I get home. I know mom uses the plastic molds. But I'm looking to do different ones than her so I don't step om her toes. Your awesome Cheryl thanks for the help.

                              Hey Cheryl, I have no patience for dainty little things, but might give the candy mold thing a try for some Christmas presents for the neighbors. Can I just melt down candy bars or chocolate chips, etc.? I know thats not very sophisticated, kinda like cave man chocolate making, but the simpler the bettuh for me. Any ideas, input would be cool.

                              Could I use ice cube trays? I know, ghetto chocolate making 101
