Man...that carcass gets boiled down in this shack for soup stock! That gig is going to happen in a hour or 2! Also on a more serious note...we take the big gig leftovers to our homeless mission...I am so humbled to be able to take food to them & we are respected by them for service...Sunset Eagle Aviation

Yeah, the bones/carcass got turned into stock. Before the turkey was cooked, the fatty stuff was turned into schmultz. Can't beat schmultz!!
As far as the leftovers... there wasn't enough to worry aboot...

Chicken or turkey fatty stuff
Chopped onion or shallot
Place all the above in a sauce pan on low heat, covered, and let simmer for awhile, until you see the fat rendered. Be careful not to burn it! This is a great substitute for cooking with butter, and much more healthy.
I have a container of this ALWAYS in me fridge...

Hmmmm. I've never heard schmultz. I have always heard schmaltz. It's a big deal in Jewish cooking.

grind it up and make sausage. Flavor profiles are endless given its relative mild flavor. Maybe quesadillas? Bag it and freeze it until later this winter... Perhaps turkey ala king? coat it in light oil and cover it in Mad hunky Hot Whang Rub. Bake it until nice and hot. Occassional spritz with vinegar/water mix for a tangy flavor like wings.sigpic
Some days I think Bravo Zulu, other days it's more like Whiskey Tango Foxtrot...
