  • First sausage venture

    I decided to do a breakfast sausage first since it seems simple and a good way to learn the grinder. This is a recipe I modified and cut in half. Since I am a novice at this do the porpostions look in the ball park?

    5 lbs. pork butt
    2.5 tbsp. salt
    1/2 tbsp. ground black pepper
    1 1/2 tbsp. rubbed sage
    1/2 tsp ginger
    1/2 tbsp. nutmeg
    1 tbsp. thyme
    1/2 pint ice water
    1 tbsp. ground hot red pepper

    Looks like a recipe I have saved. Looks about right. If that'll help ya.

    Breakfast Sausage

    10 lbs. pork butt
    5 tbsp. salt
    1 tbsp. ground white pepper
    2 tbsp. rubbed sage
    1 tsp ginger
    1 tbsp. nutmeg
    1 tbsp. thyme
    1 pint ice water
    1 tbsp. ground hot red pepper (optional
