  • Quick jerky question

    Hi guys and gals quick question. I have 6 pounds of hamburger for jerky. I'm looking for a sweet and spicy recipe. Any help would be great thanks in advance. Also just got informed my cousin is dropping off 30 pounds of venison to be made into jerky kinda thinking a teriyaki for that.

    Last batch of ground jerky I did was a Hi Mountain mix that was mandarin teriyaki or something and added red pepper flakes. The heat was good, but the mix was not all that sweet, but good. Maybe Pineapple (juice, dried, pureed?) and Sriracha or finely diced jalapeņo? Honey and black pepper? Just thinking oot loud

        Whichever you choose, do not forget cure! Especially with ground meat.

        I'm not much help with sweet recipes tho... honey is a good choice however, for several reasons.

            you could simply mix in a sweet chilli dipping sauce for a quick fix :-)

            Honey is my general got to for adding sweetness, not only does it do that but it's natures best antibiotic - so adds to the safety aspect
