  • EZ Quesadillas

    Not sure if I posted this here or not. My oldest son came up with this years ago. Been doing it ever since. Get yourself some medium salsa con queso. Spread it on a large flour tortilla like pizza sauce. Spread a little cheddar cheese over it. Pat it down to stick. Put some cooked chicken on one half. Fold over and brown in a frying pan. Tastes just like Taco Bell's quesadillas and the kids will love it. If you want an adult version, experiment with taco, fajita, or southwest chipotle seasoning. Or better yet......Smitty's.

    I've used several different smoked meats. New Years Eve, it was the smoked chuckies. In this case, a four cheese mexican blend and chopped the beef finer. Hit it with a good dose of Smitty's. A pizza cutter makes 4 nice wedges. Sour cream mixed with some medium chunky salsa makes a nice dip. 8 of these kept the folks happy.

                        Geez Ken, you make it sound so....bad.

                        Thanks for the comment folks. They're easy to make and the cheese sauce adds the pepper flavors with only a little kick. Even the weaniest can eat it. Play around with different seasonings for those that like some heat.

                        Normally I use the smaller tortillas and don't chop the meat up. But if you're making them for a crowd, use the large ones and cut into 4 wedges. Chopping the meat, just makes it easier. Plus it goes a little further.

                              We do a similar one with pastrami ground up in the food processor with Swiss cheese. We use two whole tortillas, fry in skillet and a little olive oil and cut like a pizza.

                              Looks great and will give yours a try, thanks for the recipe!
