  • Another jerky question

    Hi guys and gals me again. So I been on this jerky kick lately! I have made a big batch of venison jerky and a small batch of chuck roast jerky. My question is can I use Flank steak for jerky? Seems like the best bet for my beef selection here. I was gonna be a screwball and make the couple tri tips into jerky sounds nuts but I bet it would be good lol

    See no reason why not. Might be a bit on the tough side..but that's jerky. Cut across the muscle grain for a little more "tenderness".

        With beef, I'll use any of the round cuts or sirloin. Whatever is cheapest and lean.

          Been there done that... Had a craving one day and all I had in the freezer was TT so I used it up and it turned out Awesome... Used TQ for cure as recommended and Very Teriyaki for marinade...

            man you guys are using TT for jerky

            most of use cant even find a TT to buy...

            Actually i agree with cheap and lean is the route to go

                      Only one store in town sells them and for some reason there only get there shipments Friday

                        Yes to the flank. Local place makes it and they cut it with the grain and its awesome. They must use some sort of tenderizer, cause its sure tender. $20 a pound

                            Top eye round. Don't have to be choice. We have it all over Vegas.

                            Have it cut long grain and short grain by the butcher. Your choice.

                              I've used flank steak in the past - don't recall it turning out any chewier than any other cut of beef.

                              Used to sell it in costco - was actually their cheapest beef, why I bought it.
                              Used it for some 50:50 (beef:pork) burgers as well - turned out pretty good
