It doesn't really matter what kinds of dried beans you have.
I've been playing around with using any smoked scraps, especially with the bone in.
I have a Stock pot of about 8 quart size and here's how I do this simple
soup.
Soak 3 cups of dried beans. Navy, Black, Split Pea, 13 Bean Soup (Bob's Red Mills), Chic Peas, or what have you. Rinse the beans after sorting through them. I change water on them twice in the evening and let them soak over night.
Next morning drain them and rinse again.
In the stock pot I pour two 32 oz chicken stock containers. ($1 each at Dollar tree)
Throw in two bay leaves
2 tsp coarse ground black pepper
1 TB Soul Seasoning (Dollar Tree)
1/3 Cup dried minced onions
Add the drained beans and bring to a boil. Reduce to medium and boil 10 minutes. Add the trimmings of some smoked meat and let come back to a boil and then continue 10 minutes longer.
Add 1/2 tsp ground ginger and 1/2 tsp garlic salt and let simmer covered for several hours or all day if you like.
If you have an immersion blender you can mush up some of the beans to make a thicker soup.
Always nice to have a pot of beans on the stove during cold or snowy weather. Cornbread or sandwiches go great with this.
I've got to where when I'm smoking meat I'll spread some Kosher salt in a
small foil tray and smoke it too. That can be used to add smoke flavor in the soup too.
If you only have one 32 oz container of Chicken stock, you can fill the container half full of water and add it. I've done it and it works too.
