  • Very Simple Bean Soup

    It doesn't really matter what kinds of dried beans you have.

    I've been playing around with using any smoked scraps, especially with the bone in.

    I have a Stock pot of about 8 quart size and here's how I do this simple
    soup.

    Soak 3 cups of dried beans. Navy, Black, Split Pea, 13 Bean Soup (Bob's Red Mills), Chic Peas, or what have you. Rinse the beans after sorting through them. I change water on them twice in the evening and let them soak over night.
    Next morning drain them and rinse again.

    In the stock pot I pour two 32 oz chicken stock containers. ($1 each at Dollar tree)

    Throw in two bay leaves

    2 tsp coarse ground black pepper

    1 TB Soul Seasoning (Dollar Tree)

    1/3 Cup dried minced onions

    Add the drained beans and bring to a boil. Reduce to medium and boil 10 minutes. Add the trimmings of some smoked meat and let come back to a boil and then continue 10 minutes longer.

    Add 1/2 tsp ground ginger and 1/2 tsp garlic salt and let simmer covered for several hours or all day if you like.

    If you have an immersion blender you can mush up some of the beans to make a thicker soup.

    Always nice to have a pot of beans on the stove during cold or snowy weather. Cornbread or sandwiches go great with this.

    I've got to where when I'm smoking meat I'll spread some Kosher salt in a
    small foil tray and smoke it too. That can be used to add smoke flavor in the soup too.

    If you only have one 32 oz container of Chicken stock, you can fill the container half full of water and add it. I've done it and it works too.

    Looks like a great recipe. I love bean soup but never make it because the old man doesn't like beans too much. I remember having it as a kid....we'd put some green tomato relish (we'd actually called it green tomato ketchup) in it and a big chunk of fresh onion. And of course, you gotta have cornbread!

      Think aboot it folks... I know it sounds kinda..err gross... but toss those chewed rib bones in a pot and simmer. Anything alive is done for...and they are full of flavor.

          Heh... I know... but they do worse things to stuff BEFORE you eat it... sometimes. Give them a quick dip in a boiling pot, then drain and refill, washes 'em off.

            Anytime I'd cutting meat off a ham or any beef with a bone in it the scrapped
            out piece goes in a plastic bag and into the freezer till ready for use.

            Then when I'm putting a pot of beans together I play "Hound Dog" and go dig up my bone to throw in the bean pot. When I'm done with it a Dog somewhere gets it. I save some meat off it to dice up for the Cats.

            But Rich is right. If it's a bone you gnawed on going into a pot of bean soup that you'll be eating, then ya ain't going to poison yourself. Well, are ya ?

            Now if it's something you'll be serving other folks that may be different.

            Becky, if you just try this with a cheap bag of Navy Beans like I described
            and season it with a little piece of Ham or a piece of Kielbasa or other smoked sausage, I'd bet you could get him to at least try it cause the house will smell so good. And if he still don't like em, I'll bet you will eat them till they are gone.

            And I know some here don't even want to hear "Liquid Smoke" but this is a
            good recipe to use it in if you are using Kielbasa. About 1 tsp or so.

              Me love bean soup. After Xmas and Easter. Made a pot last weekend from the Xmas ham. No reason not to use chewed bones, more flavor, don't think I'll be saving my BB rib bones etc. I resmoke the slices of vacu packed ham while I make something else on the smoke for whatever. I use a bean pack from the store and add .5 lbs of navy dry beans and my special whatever I feel like spices with onions etc

              Always have honey cornbread and raw onions to make it special.

              Guys at work know I love my ham n beans.................

                I think we're talking a whole different kinda bean soup here. I'm German. After every Christmas and Easter ham, dad has to have his sour bean soup. It's a sweet and sour deal, ham bone and tidbits. Not sure if I've posted it here. Rich wouldn't like it. Has green beans in it, but.......

                  Hah... my Hunky side grandmother's sister married a German guy. She made him that soup, and I have had it. Excellent..and yes..nothing like the "other" bean soup. She would pick out the beans for me. I loved her!

                        Rowdy, you'll have to post that recipe for us. I know I'd like to try it

                        Part of my linage is German and part French. Headwaters of the family were in Alsace-Lorraine area. We're Alastian's.

                        Story goes that early family were Huguenots and by the 1600's wound up
                        here, bringing with them a taste for fine food and beverage. Appalachia
                        became the "New Old-World" for a bunch of these Euro transplants.

                          Might we infer that you have a fondness for things that come in brown bottles ? If so you're in good company here and we got the rest of the stuff
                          that goes good with that. Might I recommend the "Kentucky Firecrackers".
