  • Internal Temp of Beef Sticks

    Made a batch today-only 1 lb as still trying to get the flavor profile right.
    Here's the process.
    Mixed seasoning and 1/4 tsp cure last night. Stuffed in casing and into the fridge for a rest.
    Took out this morning around 7am-basically cold smoked for two hours with a foil pouch of hickory.
    My smoker was being utilized so I put the sticks in my dehydrator. It is now 245p and the internal temp is between 135-140.
    Seems like a long time to get to 152.
    Do you think the sticks are good or should I trash them?

    Should be fine. Perhaps place in an open 200 oven...if they are dry enough at this point. Bring to temp and ice water bath.

      You have cure in the mix so you are just fine. Also when you get up to 140 or so seems the last 12-15 deg go pretty fast.

        Thanks for the reply. I'll let go another 20-30 minutes in the dehydrator and if still not to temp will put in the oven as Rich suggested.
        I broke one apart and they look dry.

          If they are looking dry now... oven 'em. You don't want jerky stix!

          Preheat oven..toss 'em in. Prolly only be 10-15 mins tops

              Pulled them at 150. They are overdone. Still edible, I think.

                Aww crap. Too bad the smoker was busy. The dehy machine is for just that.

                        Check oot the Big Chief electric smokers, pretty roomy "smallish" smoker. Factory programmed to run aboot 135* I think (at least here in WA and our fairly mild temps) and with the addition of some insulation on the ootside, mine can hit 250+. Got a nice clean used one on CL for $40. New they are aboot $120. Pretty bullet proof and been around for many years. I think its a law in WA for every 5th home to have 1 in the garage

                            They are excellent for smoking fish and cheese also. I have a thread on a cheap/easy insulation box I built for mine. I cant figure oot how to attach previous threads to current threads from an ipad, so I will bump it for you to check oot.
