  • Pastrami snack dip

    We didn't have lunch today, so about 2:00 I got hungry and whipped up a pastrami snack dip. This stuff was delicious smeared on Ritz crackers.

    I started with some softened cream cheese. Next I thinly sliced some of yesterday's pastrami and diced that up.


    I also put a thin shred on some cheese - This was dubliner cheese. It is a little harder brick and I really like the flavor. From the kerrygold website..."It has a distinctive rounded flavour and a natural hint of sweetness. Aged for 12 months, it has elements of mature cheddar, sweet nutty tones of a Swiss and the piquant bite of aged Parmesan".




    Into a bowl with a squirt of Sriracha. Stir it around.




    Mrs. Engineer has a smear on the crackers, and I add more pastrami on top!


    Definitely one of my new snack favorites.

    that does look quite tasty!! super bowl dip maybe...got some pastrami sliced and waiting in the frig!! very nice!!!!

      Now that sounds very interesting. I really like the Dubliner cheese. Actually have a chunk just like that smoked and vac'd in the fridge. Hmm. May have to give that a try.
