  • Dehydrating Peppers, Peppers, and more Peppers

Brad (mackbrad) sent me some Jalapeno salt for our Christmas exchange. This stuff was good! I had to give this a whirl for myself

    Raw jalapenos

Jalapeno Powder. This stuff packed a PUNCH

Now I had to try to smoke some of these. This time I went (L-R) Habanero, Jalepeno, and Sweet Peppers

Added the Smoked Jalepeno powder to the previous batch. You can see the color difference.

    Habanero Powder

    Sweet Pepper Powder

Here goes my version of Fishawns Jalepeno Seasoning/Salt

  • #2
The finished modified Fishawn Jalapeno Seasoning/Salt. Gave out some samples and people are loving it.

The star of the show so far as far as the raw powder was the Sweet Mini Peppers. Decided to make more of this. Decided to smoke them this time.

During all this I thougt, why not make some smoked Green Chile Powder too

Just for overkill I decided to make even more of all of it. This time I smoked them @ 180 for about 3 hours

So...now I am working on a smoked Sweet Mini Pepper Green Chile powder, using the Habanero powder as the heat. Will keep you posted

Man, you a peppah freak!! Nice job! At the tail end of the garden last year, I dried all the Habanero and Jalepeno peppers that were left before the frost, then ground them up like you did... never tried the salt gig tho, and I didn't smoke them.

                  Awesome display of pepperage!

                  Drinks well with others

Nice update to the version on your blog, Bill!

For what it's worth, while I was on TD's blog earlier today, I noticed this clear spice shaker (dredge) he was using and thought that I could use something like that for my different rubs and shakes. I got on Amazon, found a couple different ones, and ordered two of one type. About 5 minutes after making that order, I cancelled it. Why? Because I found a 6-pack of the exact same shaker on Amazon for $20 (they were $6 each!). And each of the 6 comes with 3 lids (fine, medium, large holes)!

The last time I dehydrated that many peppers in the house I had to evacuate for the day with the windows open and I don't have a garage that I can put the dehydrator in. Maybe I'll run power out to my yard shed.

Agree completely, HH! I have a similar model (Nesco Snackmaster Pro Food Dehydrator FD-75A) that I'm really happy with. It comes with 5 trays, but I added 4 more.

One thing I really like about it is the temps it achieves and the consistency of the temp throughout the dehydrator. A lot of the smaller countertop models don't get hot enough to do jerky. This unit claims 160°F. I measured the temp at the bottom, couple of places in the middle (of 9 trays) and at the top. Temps were statistically even, measuring 155° at the 160° setting.

Nice way to get started ($67) without paying a couple of hundred.
