  • First time to cold smoke some cheese!

    Cold smoked some cheese for the first time this weekend, can hardly wait to try it out in a couple of weeks. I smoked some cheddar, white cheddar, pepper jack and some Colby. Used a AmazeN pellet smoker to generate the smoke and it worked great!

                ...... I typically saran wrap a small chunk and put a chunk in a small zip lock bag, just for testing....

                    Now that sounds like a great plan! Any suggestions on how long the vacuumed pack cheese will last in the fridge (don't want to freeze it)? Assuming of course that it does not all get eaten right a way...

                      I've kept it for several months, still was excellent.
                      Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
                      My best asset however is the inspiration from the members on this forum.

                        Nice job.

                        Your pick of cheeses mirror my favorites. I have also tried Swiss Cheese and was not a fan plain, but on a grilled ham and cheese sandwich the smoked Swiss was great.
