During this bitter cold weather, the DO is so easy and efficient to use that I have hardly touched my grills and/or smokers. I haven't been snapping a lot of pictures, either, but here are a couple of cooks from the past month or so.
I got this neat little Lodge melting pot and an 8" DO last Christmas. Took a few weeks but I broke them both in with a hot fudge cake. I have made this a few times in my 10" but the recipe is actually for the 8" so I had to try that out and see if any difference. I mixed up the cake mix before leaving home and put in ziplock bags.
Bag #1 contains:
3/4 cup sugar
1 cup all-purpose flour
3 tablespoons cocoa
2 teaspoons baking powder,
1/4 teaspoon salt
Bag #2 contains:
3/4 cup sugar
1/2 cup brown sugar
4 tablespoons cocoa
When ready to bake the cake, I dumped Bag #1 into the lightly greased DO and added 1/2 cup milk, 1/3 cup melted butter, and 1-1/2 teaspoon vanilla extract and mixed until smooth. Then take Bag 2 and sprinkle evenly over batter. Pour 1 1/4 cups hot water over top, DO NOT stir.
Melting the butter.
Pretty, shiny and new.
Ready to bake.
I baked this around 400 degrees....12 coals on top and 6 on bottom for about 45 minutes. Let cool about 10-15 minutes before serving.
Bad pic, but it was good. Nice hot pudding cake to warm you up on a cold day...had to eat it fast though because it didn't stay hot long. The recipe works well in either an 8" or 10" DO and I believe Wingman even did this in a 12" that turned out OK, too.
I tried some country style ribs a few weeks ago and they turned out melt in your mouth. I cut up some potatoes, carrots, onions and apples with a little salt and pepper and put them in the bottom on my 10" DO and laid the CSRs on top.
CSRs were covered in Mad Hunky General Purpose.
16 on top and I think I had 7 on the bottom.
About an hour later I added a handful of basil and parsley...just threw it in.
About 30 minutes later, it was time to eat.
And one more....chili!!! I have made more chili this winter than I can ever remember.
The farm is always pretty in the snow, but I am SO looking forward to Spring.
