  • Seasoning new YS640

So I did the initial burn and now doing the second round after oiling the entire interior. The next step is to do a seasoning temp test with 3 lbs of bacon.

I have Q-Mats that I got from Todd, should I do the bacon test directly on the grates or use the Q-Mats?

Got a half hour to go before I drop it from 350* to 225* for the bacon.
    Thanks, Joe.

Either way works. The mats make it easier to move the bacon around if you need to change its' position to get it done evenly.

A much cheaper way to to the hot spot test is cheap bonk bonk biscuits. Don't taste as good as bacon though.

I decided to do it without the mats, 3 lbs of bacon is a lot of pork! Should be done soon then I'm going to bump it up to 350 and do thighs and breast with Oakridge BBQ brine and rub.

Tomorrow going to do biscuits, just cause I have them. My wife bought them from BJ's and there are 4 tubes in the carton! Guess we'll bacon and biscuits for breakfast tomorrow.

Ohh man, bacon and biscuits with bacon gravy.

I found that the right side is always hotter, but it got better after a few long smokes. Dunno why. I keep my baffle about 5" in for normal cooks, all the way to the left for grilling steaks. I reverse sear them, it seems to work really well. You get grill grates? Well worth it for perfect steaks.

Flip your grill grates over to the flat side and cook your pizza on them...if you have 2 sets of grill grates, put the second set on the top shelf long ways, with the flat side down, and cook your pizza between them.

What is everybody using when "oiling" the interior with before the 2nd burn? Cooking oil? Just wondering my 640 should be her tomorrow.

I used canola oil and wiped it on the interior surface. Spraying non-stick sprays such as Pam works too. I also try to wipe down my grates with canola oil after each cleaning, as it makes cleanup easier the next time.
