have any of you guys ever used orange or peach wood for smoking cheese? We have a few blocks of cheese that we are going to smoke tomorrow while it's still cold enough outside (cheddar, pepperjack, colby jack, mozz.). usually i'd use apple or cherry, but i saw orange and peach on sale today at the store and picked up a couple bags of it. I figured i would find something that it went with eventually. never tried it on anything before and since we are doing cheese tomorrow, i was thinking about giving it a shot. any suggestions/ideas/comments? just curious. I figured worst case scenario, we try it, we dont like it, and we give it to the neighbor friends who are moving anyway. lol
