  • OK Buckboard this time, no pulled ham

OK I was inspired by morkdach- and I love the BBB!

Got a 9 Lb'er defrosting now. Cost? $8.99- WHEEE! Gonna garlic/onion the bejeezsus outta it, with Morton's TQ and ALOT of CBP. Dry cure wrapped up in plastic and set in the fridge. This baby oughta be SCHPICY!

    Pix to come..it's still defrosting

AND BTW still no reply from "Meathead" err.. "Meatman" who said you should not cure frozen meat...

I would debone it. Especially since you are gonna want to slice it when it is done anyway. One way or another the bone is gonna have to come out.
Here is a video on deboning a pork butt.

Maybe you will have to get your hands on the good camera for the one you are doing now.

And from the Morton FAQ page...
Morton® Tender Quick® and Morton® Sugar Cure® (Plain) are fast meat cure products that have been developed as cures for fresh and frozen meat, poultry and game.

How far did you watch? Once he gets past showing off his grinder and into actually deboning/trimming the butt the camera is on a tripod and it isn't too bad. But I probably could have found a better video.
