    So ya'll got me jonesin for some bacon with them buckboard posts, but all i got is a loin in the freezer, so here we go. Bacon Zeeker style...lol


    The culprit...a 7.5 lb loin

    First half rubbed with the usual tq, sugar, onion powder, garlic powder, cbp, and a shot of cayanne.

    Seasoning for second half...same as first cept I subbed the cbp for lemon pepper, and some lemon zest, and a hit of crushed habenero...

              This Zeeker bacon.. ;) looks like it is going to be yummy, I can't wait to see how it comes out!! especially the lemon with the habs... I hate the wait!!!!

                well i got 7 days cure time on these loins, so I rinsed em off and their soaking for bout 3 hours, before I let em rest in the fridge fer the night. Plan on smokin em tomorrow sometime. My choice of wood this time round will be apple and maple. Gonna glaze em, just not sure what I wanna use yet.

                    got started smokin on this thing later than expected today (thats what happens when ya got 2 lil ones under age 10 ) but finally got er goin...so here's what i chose. on the basic cured half im glazing with pure maple, brown sugar, and oranje juice. the lemon pepper habenero half, im glazing with a store bought jalapeno and honey glaze. both being smoked over a 80/20 mix of maple/apple respectively. here they are 1 hr in smoker temps between 180 -220.

                      Ab freeking spectacular Roadrunr. Can't wait to see how this turns out Bud. And thanks for the name sake. I do like mine rolled in corn meal (Traditional in the great white north), but non the less all the best on this bacon frenzy. Should last you about 1 day (Trust me) not easy to stop once the bug hits. Again looking forward to the finished product. Oh a mandatory give'em for this one is in order...

                            I think the camera is making them look more red, they're actaually a nice deep brown. I cheated and sliced off a few pieces tonight and fried em up cuz my son wanted some. I sliced the basic seasoned one. Here's a pic. Beautiful pink inside, deep brown outside and tasty as all hell...I'll take more pics in the a.m. when I slice em all up.
