  • Bassmans Buttery Peanut Brittle

    3rd times a charm
    I posted last week that I was having trouble with a Peanut Brittle recipe and Bassman came to my rescue and it was awesome

    Buttery Peanut Brittle

    2 cups granulated sugar
    1 cup light corn syrup
    1/2 cup water
    1 cup butter
    2 cups peanuts
    1 teaspoon soda


    Heat and stir sugar, syrup and water in 3 quart saucepan
    till sugar dissolves. While syrup boils, blend in butter.
    Stir often after 230°. Add nuts at 280°; stir constantly to
    hard crack stage (305°. Remove from heat. Quickly stir
    in soda mixing well. Pour onto large (buttered) baking sheet.
    Cool and break into pieces. Makes 2 1/2 pounds.


    I did add 3/4 cup of peanut butter to this recipe.Was delicious and should do wonders for adding to my man titties

    Glad you enjoyed it! That's probably the best peanut brittle that I've ever had.

        AhhHA! mystery of the candy coated thermapen solved! Nice looking brittle... I'd like to make a batch with a dash of Smitty's I think :{)

              I'll bet the pecans would work just fine. Maybe I'll do a batch with pecans and add the peanut butter too.

                  I love Peanut Brittle and often times miss it over the holidays, Thanks for posting as I will want to hit this one in December! So, did you smoke your nuts?

                          I made some of this stuff this past weekend. I had a problem getting a good temp reading. I used my thermapen without much success. When it became a very hot blob I dumped it in a pan and let it cool, it cracked nicely and is very tasty. I did add a heaping tablespoon of Hot Whang! to the batch.

                            I'll bet that was tasty.
                            I too used my thermapen and was disappointed on its performance also. I think a candy thermometer will be in order
