Much like a lot of you, we had a beautiful weekend here in Kentucky! We had our first campers at the farm for Saturday night. I smoked a pork loin covered in Mad Hunky GP. I had some chicken legs and thighs that I put in a bag with Mad Hunky poultry brine Saturday morning before we left the city. Also made Dutch's wicked baked beans. And in my Dutch ovens, I made hash-brown casserole and a Hornet's Nest Cake. The cake was by request from one of our friends who was camping.
We were all as full as a tick on a dog!!!
Frying bacon first for the hash browns and beans. Then onion and peppers for the hash browns.
Beans and pork loin on.
Added the chicken a bit later. I used Badia fajita spice.

Hash browns
I let the pecans get real toasty on top of the cake and all those butterscotch chips just melt. This taste almost like a pecan pie.
I put a couple of my hummingbird feeders up...hoping they will be back soon. I love watching those little buggers.
Next morning, I used the leftover loin for a quick breakfast. Heated it on the grill, toasted some buns, and scrambled some eggs. Here is my leftover smoked pork loin, scrambled eggs, cheddar and grape jelly sandwich. It was messy but it was good!
Lots of spring flowers and bushes in bloom right now. I hope today's snow and freezing temps don't do too much damage. This is a quince bush that was SO bright last weekend...but this pic does not do it justice.
