  • Say Cheese!

    On the way home I stopped at the store. They had a special on some cheese. You see where this is headed.

    The first batch I made went way too fast, and I've been wanting to try something. I bought a burner for my Lil Chief, and haven't tried it yet. It's only 750 watt. But it did ok. It was only about 10 degrees out, and it ran 65-70.



    Some Havarti, Colby Jack and Vemont Cheddar. Vac'd and in the fridge. About a week wait.

      Nice! And the 'aging" period on smoked cheese really seems to help!

          Yep, I'll leave it for about 5 - 7 days. Then break the crackers out. MMMMM. I just had to cut a slice off to see the color and a taste. That vermont cheddar is going to be fantastic.

            I just had to make more. They had a sale on cheese. 2.98/lbs. A little Marble Cheddar and Pepper Jack. Now the hard part......waiting.
