  • Sterno type units?

    Was not sure where to put this-
    What about using the sterno type heaters as a heat source for a cool smoke? I have that buckboard about ready to smoke and was contemplating how to keep my temps down in the WSM...real hard to keep below 150 or so.

    Maybeone of these cans under my charcoal basket with a couple chunks in it... gonna give it a test run. They burn super clean...soo....

    for cold smokes i use a 3lb coffee(well burned in) can w/ 1/4" holes drilled or punched in the bottom. 5-8 briquettes & a chunk of wood.it runs around 80-90f. you could use a chimney too.
    brink vertical charcoal(the carp)
    18" old smokey charcoal grill/smoker
    cast iron Hibachi
    22" Kettle w/ "Smoke-EZ" styled riser extension
    & rotisserator
    12x7 wells cargo vending trailer(mods in progress)
    stuffer,slicer & more carp than i can fit in it...
    Marshall amps & various awesome guitars,drums,P.A.,etc.recording studio.....

      I have tried that Rob... I still get to 150 in the little WSM. That DOES work OK in the winter tho, but when yer starting at 80° ambient it's tough.

        I would think it would work... I think each can is like 2500 BTU's.. I guess you get around 2 hours of burn time for each can???

          yeah...have a dozen cans left over from the chafing dishes I used for the grad party.

          I got some thin blue at 105° right now :{)

              My smoker is running higher than that right now just sitting in my back yard without any fire.

                Heh... it's fairly cool here, but bright sun...75 outside. Smoker has now seemed to settle in at about 127° or so. I'm happy with that!

                  Well..results are in, and I'm fairly impressed with the performance. I maintained around 130° for 3 solid hours, and only used 1 rather large hunk of hickory. I think this may just be my lo-temp answer for the WSM :{)

                  Bacon will be cured Wed. 7-29, so I'll give it a go!

                      All I did was set the "Sterno" can (Not actually Sterno brand...this can has a wick and a liquid in it, not the old Sterno gel thing- available a Gordon Foods or other places I guess) in the bottom of the smoker, and put my charcoal basket above it with a hunk of hickory over the edge of the flame... and away she went.
