    I love a good steak, but when you pair it with spicy creamed spinach and crunchy sweet potato fries, well I'm a happy squirrel. I was gonna make a dipping sauce for the fries but decided on this instead:







    I sous vide the NY strip then coated with T-dust and using the vortex on the weber gave it a nice sear. The creamed spinach has shallots, garlic, mushrooms and chipotle flakes along with good parm and heavy cream. I could eat creamed spinach every day.

    The sweet potato fries were par-boiled then I made a mixture of corn starch, cinnamon and water. It was a little thicker than milk, but not as thick as cream. I double fried them as it is sometimes difficult to get really crunchy sweet tater fries. Thanks for looking!!!

    I'd be afraid to mess up that plating... NOT!

    Cheryl... you must have seen this... maybe adapt a bit... give it a run. It's a bit more "bold", but I think you'd appreciate it...

                I love that!!!!! I just prefer sauteeing the spinach, maybe in the bacon fat next time. Mmmmmm...... What's funny is I did cook bacon and it was supposed to go on top of the creamed spinach, but I ate it all before I was done cooking. Definitely gonna try your version next!

                  I absofrickenlutely love creamed spinach! Never dipped sweet tater fries in it though, think I will next thyme thats gotta totally not suck!
