    I hope you guys aren't getting tired of my meat posts. I'm probably gonna have the worst case of shingles in a few years from all this red meat. I cooked a ribeye today, the usual method, sous vide, T-Dusted and on the Weber with the Vortex. I made a mushroom sauce, grilled veggies, heirloom tomato, parm shavings. This just never gets old.

                  It is a Madeira sauce. Very simple. Sautee shrooms in clarified butter, add finely chopped shallots and garlic, get a little color then add Madeira. I was only doing enough for one steak so I used about half cup Madeira. Then I reduced by half and added in the juice from the steak sous vide pouch, about quarter cup. Reduce until it starts to thicken add in a bit of fresh thyme. Wait to season with salt and pepper when it has reduced.
