    Hey all - when it comes to jerky, really good jerky, I've had mixed experiences - both in trying other's and my own attempts. Had a guy offer me some about two weeks ago...I was appreciative and a bit skeptical...upon sampling it a few days later...WOW - awesome jerky, so I immediately asked him for the recipe. He smiled and told me he would share his super secret recipe...so I now share it with all of you - Nesco Original!

    He gave me enough packages, cure and spice, for three pounds. I dug through the freezer and found a round steak that tipped the scales just over 3#, let it marinade for the suggested 24 hr period, got up early, and hammered it at 200* for right at 4 hours this morning. Samples = damn good...can't wait to let this meld in the fridge for a day or so.

    So....here ya go! Nesco Original Beef Jerky











    Thanks for checking out my jerky post! Hopefully this gives you another option to all of the other good jerky recipes out there.

    Looks good... I'd be willing to trade a package. :{)

    "This is true jerky flavor, tastes like it was smoked." Is somewhat worrisome tho. Well..guess ya gotta do it somehow... especially using a dehy unit.

      Yeah, I read that too, which was surprising b/c the sample package I ate, which was done in a dehydrator, had no smoke taste at all, just straight up good beef jerky. That's why I smoked it.

      Like I said, Rich - gives folks another mix to try.

        Well heck... what was that all about then? I mean it's MADE for a dehy..so why not add it?

        I'm all for jerky of any persuasion... personally I feel the need to come out with 10 more kinds... in the mean time... try 'em out!

                Walle - that looks like it'll be great jerky - I'm wondering about the apparent thick cut....?

                  Yeah...they are right at the 1/4" mark. I'm not into jerky that you have to soak first before you can eat it. Definitely have to keep this refrigerated or frozen before you use it - it's dried out...but not to the snap, crackle, pop stage. Way good to go for a day in the seat of the truck or a pack...mine never lasts more than a day. Probably wouldn't leave mine in the cupboard for 14 months....
