  • Corn Cakes n Pulled Pork Hash

    I make these corn cakes when camping, they take on the campfire smoke really well. Decided to make some at home....I think I'm overdue for a camping trip. :)


    For the corncakes, I use...
    1 cup of flour
    1/4 cup of cornmeal
    1 1/2 tsp baking powder
    1/4 tsp of salt
    1 tsp of sugar
    1 egg
    About 1 cup of milk or more if needed for a thinner batter
    1 cup of corn
    Chopped green onion
    minced jalapenos







    fried the cakes til golden...







    fried some pulled pork, taters, onions, garlic and a few seasonings..



    topped my corn cake with the pulled pork hash...



    added an egg...



    sprinkled with cracked black pepper and minced scallions and called er good.







    Reminds me of camping. I really, really need to go. lol

        I understand the camping bug CG. It's bitten me as well. but I just can't seem to get away. Your corn cakes look to be fine all by their lonesome. Thanks for posting.

          Adam thank you! Sorry to hear you can't eat eggs! Right now I have them running out my ears... my hens are really keeping me busy trying to figure out new ways to cook them. I should just cook some of the hens instead! lol

                        hmmmmm, what's better than a corn cake or fritter in a cast iron skillet? and a perfect over medium egg on top....yum.....that's the way I like my hashed browns, 2 on top doused with some Tapatio or Frank's....heavenly

                            Well corn cakes is definitely on the list now...Thank you very much...

                            Made a hash sorta thing just last night with burnt ends...No pics...And I just gotta have cheese on me eggs...But they sure do look purty with out...
