  • Dungeness Crab Egg Muffins

    We make egg muffins all the time as they are one of the easiest things to make to serve to large groups for breakfasts. I know you all are thinking McDonalds, but that's not even close to these!

    You can use any pre-cooked protein, or diced veggies that you like. We have use bacon, Canadian bacon, breakfast sausage, pulled pork, buffalo chicken, etc... Jalapeņo, bell peppers, onions, chives, spinach, mushrooms, asparagus, etc.

    For today's breakfast I had some Dungeness crab, fresh chives from the garden, grated cheese, salt and CBP.

    Preheat oven to 425

    For a half dozen muffins use six eggs. Crack into bowl, add crab, cheese, chives, salt, pepper, beat.

    You will need parchment paper or parchment paper cups to line the muffin tin. You also should spray the paper with cooking spray.

    Pour/spoon egg mixture into paper lined tin. Bake in oven for 25-30 minutes or until cooked through (clean toothpick trick works if you are concerned).

    Garnish with a chunk of your protein, bit more cheese and chives, serve hot. These do reheat extremely well so you can make the day before.

            Thou shalt not envy, but I do envy y'all that live in fresh seafood places. Oh would I love to try FRESH seafood. That looks awesome!

              Thank you! These are great with what ever protein you have, or just veggies. The crab is pretty special. Smoked salmon is another favorite!
