View Full Version : Dutch's Ranch Style Beans
Dutch 07-31-2009, 12:54 PM Okay, folks-Uncle Dutch has been busy in his research kitchen again working on another bean recipe. Kind of knew what I was shooting for so this recipe didn't take as long to develope as my Wicked Baked Beans did.
So give it a try and let me know what y'all think! Just so ya know, this is not a sweet bean recipe like the WBB. But it's still good stuff!
Enjoy!
----------------------------------------------------------------------
DUTCH's RANCH STYLE BEANS
Ingredients:
1 cup dried pinto beans,* see direction #1
6 bacon slices
3 cups water
1 (15 ounce) can stewed diced tomatoes
1 bell pepper, chopped
1 onion, chopped
1/2 jalapeno, seeded and finely chopped (optional)
2 tbls Worcestershire sauce
1 tbls brown sugar
1 tsp chili powder
1 tsp paprika
1 tsp cracked black pepper
1/2 tsp dried mustard
1/4 tsp ground ginger
salt to taste
Directions:
1. Soak pinto beans over night or boil for 1 minute then let sit covered for one hour.
2. Fry bacon until just slightly crisp, remove from pan and dice. Saute onion and bell pepper in bacon grease until translucent.
3. Drain soak water from beans and add the 3 cups water. Bring to a boil, then cover and reduce heat to simmer. Cook until beans are tender – about 1 1/2 - 2 hours. Drain well.
4. Add remaining ingredients and mix well. . If you are adding the beans to a smoker, move on to Step #7.
5. Bring mixture to a boil, then cover and reduce heat to simmer
6. For a thicker sauce, remove cover and continue to cook until desired consistency is reached.
7. If you are going to smoke the beans, pour bean mixture into a 9 X11 X 2 3/4 inch foil pan and place in smoker. Give the beans a stir several times through out the smoke.
* 1 cup of dry beans will yield 2 -2 1/2 cups of cooked beans. 1/4 cup of cooked beans is 1 serving.
MichChef 07-31-2009, 01:07 PM Thanks Dutch, this is just what I've been lookin' for. I won't eat baked beans at any potlucks or family functions because I just don't like the sweetness of them. I'll take your word for it that these aren't and give them a try. I think I'll look me up a big chuck or a brisket and throw it in the smoker along with these beans. I can't imagine a meal coming out any better than this.
Kewl Beans!
To me the lack of sweetness make this definitely worth poi-nts.
Bbqgoddess 07-31-2009, 01:09 PM Sounds like another winner Dutch! Thanks for the post!
lcruzen 07-31-2009, 01:14 PM Sounds mighty fine! I was exspecting to see ranch dressing mix in the recipe somewhere but I guess that is not what you meant.

Walking Dude 08-24-2009, 12:17 PM Dutch...........i take it that these will also take the 2.5-3 hours that your wicked beans do?

Walking Dude 09-05-2009, 02:07 PM 1/4 cup of cooked beans is 1 serving.
HUH? for who, the munchkins?...............lololol
ShooterRick 09-05-2009, 03:21 PM Yep this one is saved. Thanks!
MichChef 01-13-2010, 02:58 PM Hey Dutch.....Have you ever smoked these under a chunk of beef or pork so the drippings fall into the beans? I really want to try that soon, but don't know if it will make them too juicy.
I also buy a brand of breakfast sausage that has so little fat in it that I have to add some bacon grease to it in the pan to get it to fry. I bet a fattie made from that and smoked over these beans would be great with just juices and very little fat dripping into them.
Dionysus 01-13-2010, 04:14 PM Another winner Dutch .... Thanks
Kyote 02-01-2010, 07:03 PM Dutch, thy beans will be done on earth as it is in heaven. where's the preacher at for an amen?lol..
Kingudaroad 02-15-2010, 01:45 PM I usually don't follow recipes very well. Especially for beans. But I went pretty much to the letter with these since Dutch, I know, put a bunch of work into it.
Ok... I used 1 whole jalapeno and rotel tomatoes instead of regular stewed tomatoes. I do like i bit more heat than the average bear.
They were very excellent and I give 5 stars to Dutch. Thanks man!!

Whenever I do beans (my Ranch style or the Wicked ones) in the smoker and I have a chunk of beef or pig in to smoke, the bean pan always gets placed under the meat to catch all that fatty goodness.
Gotta remember folks, In Barbecue, fat rules!!!:bounce:
erain 04-15-2010, 01:46 AM well this will be a real dilemma... this recipie looks as good as the original, sheesh gonna either have to decide which to make or do both... hmmm wonder if they make foil pans wih a divider... will give these a shot soon. thks for sharing dutch!!!poi-nts
MichChef 04-15-2010, 09:24 AM Hey erain, yes they DO make foil pans with a divider. I've used them to make side by side scalloped potatoes, with cheese and without.
