  • Just some summertime smoked mozzarella

    Was going to make a recipe that called for Buffalo Mozzarella...
    A quick search told me that this is cheese made from the milk of water buffalo...WTF...
    Aint no water buffalo in Kansas
    But it got the wheels a turning...Thinking buffalo wings the whole time...

    So I got a couple pounds of fresh mozz and smoked em up like this...1/2 pound of each...
    Smitties....
    Hot Whang...
    Tatonka dust...
    and plain ol mozz...

    Brought the Chargriller into action for this...
    Lit a few chunks of lump and added a foil pack of pecan chips...


    After about an hour...No meltdown...
    I rarely smoke for more than an hour because I like to taste the cheese along with the smoke...


    After chilling in the fridge...

    I sliced up the plain one...



    The awesome T-dust...


    Smitties...


    And of course the Hot Whang...


    All I need now is a good summer sausage and a few cold drinks and Im ready to sit down and watch the race...


    Summer time smoked cheese...

    I could help with the tasting without any problem.

    You gotta put more heat on to get it to string through the grill to the fries below.

      Yeah Bear...Im still learning the finer points of cheese smoking...Maybe Ill get the hang of it some day

            Tasty looking cheese smoke! Some of Bears caseless pepper on would go great with your cheese! So would a nice smokey Mezcal cocktail!

                  Nicely done Craig! I see all that cheese and think wood fire cooked pizza. I bet a Margarita style pizza would rock with the HAW mozzarella.

                    Very well played Craig.
                    Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
                    My best asset however is the inspiration from the members on this forum.

                      I have done the same using jack cheese...That worked a bit better due to less moisture...This cheese got kinda wet on the outside when bagged...
