  • What to do with a unpulled shoulder

I had a block party today that I made 4 pork shoulders for. We ended up needing 3, so I have one that is currently un-pulled. What is the best thing to do with it? Do I pull it now and just put the meat into the fridge/freezer, or should I leave it un-pulled and pull it after it cools?

Pull it, bag it, freeze it.

              Pull pull pull

Zip bags also work OK for shorter term storage......

I have also sliced it when nearing pulling temps and couldnt wait (185ish) and its also really good

I pull, reduce and mix the juices back in and pack it in 8-9oz foil containers before freezing.

I figure that's about right for a couple of sarnies or 3 or 4 tortillas. :-)
