    I'm looking for a thinner, chewy pizza dough recipe that I can throw on the GMG within the next 4 hours.

    That recipe is straight from Naples, Italy and is very good. I usually do it with half bread flour and half all-purpose flour, but it is not totally necessary to do that.

    There are a lot of notes and discussion that might provide some good tips and pointers, as well.

      For a quick dough use this.. or I use this.

      2 cups flour
      2.25 tspn active yeast
      pinch salt
      pinch sugar
      .75 cup warm water

      Mix dry add wet mix for 10 minutes rest for an hour and then get after it.

        Are either of these necessary to have a pizza stone? Or should I throw it in the oven with a pizza tray?

          The pizza stone is not necessary for the one I posted, but I do like it better when it is cooked on one.

          It's very good as-is, but it's better on a pizza stone.

            I went with this in a hurry and I liked it a lot. It went a little long on the smoker cause the wife was running late. I didn't burn it but it was probably in a few minutes longer than it should have been. It will be better next time. Thank you sir!!!!!

                I had the wife pick up a stone on the way home. It would have been perfect if I didn't throw it in the broiler for a few minutes.

                I have pics but this site doesn't like androids......

                  close to mine.....i use a full Tbs of yeast and sugar and add olive oil........

                        I think a well seasoned stone really helps develop flavor on a crust.. I always use a stone that has been preheated for atleast 30 minutes after the oven reaches the desired temp. A hot stone is very very important!!

                        I do not add oil of I want a chewy crust... except for the outer part when resting to keep skin from forming.

                          FYI. If you use the free tap a talk app it is actually easier to post than using a pc. Like you can upload pics straight from your device without using a hyperlink. Get subscribed thread updates with a notification and so on.
