What to do With RED Pepperoncini???

Got a boat load of em and not sure what to do with em. Looked at a few posts online for canning, but most if not all, say that once they are red, they get mushy when canned (Pickled). I hate to let em go to waste. I love the green once pickled and figured the red ones would no problem. Anyone have any input on this???

Or a good favorite pickling recipe for Red ones?

Lots of pickle crisp or Alum? I've personally not done red ones, though I had one several years back.. can't honestly say whether it was mushy or not... my memory aint what it used to be.

Roast em...Peel em...Freeze em...Save em till ya have a good purpose...

Got me two jars of pickle crisp a few weeks back. Can't hurt to try picklin a jar or two so thats what Im gonna do. Just hit the garden, picked about 50 of em, gonna cram a few in a couple quart jars and go with a recipe I just found online and toss the rest in the dehydrator and figure out a use for em later

I still have about 200-300 more growing.
