  • Remember them RED Pepperoncinis???

The ones I asked about last week? What to do with em? Well, I decided to dehydrate them and figure out a use for them later. WOW is all I can say. So far, did around 200 of them and ate around 2 dozen. Dried to a brittle state. They have a super concentrated sweetness and pepperiness to them, with a very subtle hint of heat at the end that sort of lingers. Have another batch in the dehydrator as we speak, vac'd them into mason jars. Crumbled up, I can think of many applications where these would work. Also considering, depending on how many more come in before they die off, of making some sort of pepper mash out of them. Would be more of a sweet pepper mash

    On the trays.

    In mason jars.

Seed them, and then smoke dry them for a bit. I bet they'd make some awesome smoked paprika....
