  • Pot Pie Using Leftover Chuck Roast

    The September chill swept into Kentucky last weekend and has stayed with us through the week so far. When it gets chilly, I think stews, chili, baked spaghetti and pot pies! This time I used a left over smoked chuck roast.

    The chuck I smoked at the farm on the kettle with hickory for a couple of hours and then panned and foiled it with some veggies. I swear there is a chuck some where under those veggies! This picture was taken before I decided to add some sliced green pepper.



    Got a little smoke ring



    First meal we got out of the chuck.



    Brought the leftovers home and last night threw a pot pie together. I heated the veggies and diced chuck until warm and used a jar of mushroom gravy. I also threw in a can of green beans.










    The pot pie was very tasty with the smoked chuck in it, and was an easy, quick meal to fix on a weeknight! Thanks for looking!

              Home style cookin at it's finest right there. Great pics too Becky.
              Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
              My best asset however is the inspiration from the members on this forum.

                Winter? Shit, in Oklahoma that could mean anything. Severe ice storms, heavy wet blizzards, or drought that cracks the foundations of our homes. Too hard to predict so we just buy lots of toys for whatever the occasion. Last year I chipped three inches of ice off the stick burner and burned through two bags of Kinsford blue and pecan just to get a 14 lbs packer to burnt end stage. Two generators for backup and jump bag of survival gear in case me and the family need to evacuate. Last time we did that a nice hot pot pie would have been a feast to reckon with! Wife and I decided tonight to do the same process only smaller. Small pans, flash freeze, vac seal for transport. Thaw and reheat for game day or in the oven over the propane stove. Gonna rock our bellies either way. Thanks for the inspiration girl!

                  Uhm, yes I am making this, this Fall. Looks awesome and thanks for the mushroom gravy tip Becky, I typically use mushroom soup

                  Nicely done on both meals!

                  Just curious, if you made this in a DO, would you grease/butter the DO?

                    Sometimes I make my own gravy but when I want convenience I like the mushroom gravy for beef and cream of mushroom or potato soup for chicken pot pies. I will be doing a pot pie in my DO sometime this fall at the farm...the old man has already dropped many hints about it. I always give my DOs a light spray and wipe down with a paper towel before using.
