  • Cheese time!

Friendly reminder to all that hunting season is coming up, so take advantage of the dropping temps and cold smoke'a da'cheese!!

Couple of things to jazz up this basic cheese post!

Time Line: Opening day lunch minus two, preferrably three weeks.
Deal: Kroger has one hell of a deal on their 2lb blocks of cheese right now - $5 off. May not be top shelf cheese for some, but I have never had any issues with it.
Smoke: Used the AMS loaded with 1/2 oak, 1/2 hickory, and added apple slivers on each row - the smell of the smoke was killer.
Equipment: Second use of the BBQ/Smoke/Frog??? mats that I ordered from T Johnson - LOVE THEM!!! If you have a smoker with large grates, you need to get some of this stuff. Top rack of dishwasher and they are good to go for the next project.

    ...and to prove it happened!!
    4#' Sharp Cheddar
    2#'s Pepper Jack
    2#'s Moz

Thanks for checking out my post and mark your calendars!!
Making 25#'s of snack stix next weekend an I'll be pretty well set.

Oh yeah baby. Temps are a fallin here for sure. Headin out to the store here in a few, will try to remember to look for any cheesy deals.

Should have done this a few weeks back. Were heading out next weekend for one last canoe trip before the white stuff starts to fly. Be nice to have some smoked cheese for that trip.

I got mine done a few days ago but didn't take any pictures. I'll have to get back in the groove pretty soon. Been too long.

Good looking cheese stash BTW Tracey. That'll go good with the snack sticks.
