Had some Sirloin handy and going to a guys night Friday that is food and booze oriented, so i took 2.5 lbs of Sirloin and trimmed it up. Ended up with just under 2 lbs and gave it the HI Mountain Hickory cure and added some CBP. Smoked for aboot 2 hours with JD oak barrel pellets, then let it firm up until Gumby like. Turned oot excellent, its a great cure/seasoning. Just a pic I sent my buddy to let him know I Vac Packed some to bring tomorrow. Me, my wife and son ate probably 70% of this. Lol
