I got this from a friend of mine at work, it is really good! There's a mix for 3 lbs and 12 lbs... adjust to your quantity.
PICKLED MUSHROOMS:
3 POUNDS OF BUTTON MUSHROOMS (BLANCHED AND DRAINED)
BRING TO BOIL:
1 CUP OF WATER
2 TBLS. OF SUGAR
1 1/2 CUPS OF WHITE VINEGAR
2 LARGE CLOVES OF SLICED GARLIC
2 TBLS. OF SALT
2 MEDIUM SLICED ONIONS
ADD MUSHROOMS, BOIL 2 MINUTES, PACK IN JARS.
