  • Smokin Hot Sauce...a few pics...

    A few requests for the secrets of the "Smokin Hot"...
    Been keeping this to myself for years...

    Basic salsa veggies...Tomatoes, onions, limes, and a couple heads of garlic in foil...In for a quick smoke...Not really trying to cook the veggies...


    Limes come in first to cool before juicing...


    Tomatoes next...These are just to the point where the skins will slip right off...


    Onions all smoky...Cut this way they don't dry up as bad...


    Second batch is a pound and a half of Red Savina Habeneros...


    Brought in just as the juices start to show up in the bottom of the peppers...
    Wanna keep all that juice yanno...


    Then all the stuff is run through my "peppers only blender" and the pulp and seeds are screened out.To this is added some vinegar, salt, pepper, and some honey...

    Sauce is heated to boiling...Lena has left the room coughing and sneezing...


    And the result is nearly 6 pints of smoky hotness...

    Just thinking about it brings a tear to my eyes, starts my nose running, and a little bead of sweat forming on my forehead.

                    To me this sauce is a flavorful addition to any dish...Plenty of heat...I would never dream of dipping chips in it...We'll leave that to Wingman...Compared to the Reaper Madness sauce, this stuff is candy......Compared to store bought hot...This is through the roof...

                    I'm giving it a 6.5 on heat and a 9 on flavor...

                      I ate a 1/4 of the jar with chips. You need to send out some directions next time

                      It has a good back heat and very smokey. Would go great in some spaghetti sauce, chile, stews, and things along those lines if I follow Craigs directions

                        I got to try this. Wondering how it would turn out with jalapenos? Maybe a three pepper blend? So far all I've really made is peppered vinegar. Got to make sauces to suit me. Sauces without a ton of sugar.

                          Changing from the habs will surely change the flavor...But to each their own...

                          The only reason for the honey is to quiet down the vinegar bite a bit...
