  • More Cheese time Grommit!

    Well I did some cheese, finally got cool enuff here. Got 3 #2 blocks of Tilamook at about $9 each. Smoked them with a mix of Pecan/Hickory for about 4 hours starting at 6AM.

    Hehe, they began to think about becoming nacho cheese, but it was fine. It was about 55f when I started. I used my MES 30" with the 6" AMNPTS (x2 one at a time).

    Came out good. And a question. This stuff freezes fine right? Some is for XMAS and not gonna eat it all in a month.

    No need to freeze it, it'll keep in vac-pack bags for months in the fridge.
    Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
    My best asset however is the inspiration from the members on this forum.

      Thanks, my worry is fridge space. I'll let it sit for two weeks, eat some, give some away, and freeze some of it if I can.

                What these fine Gentleman suggested. Freezing cheese can definately change texture. I have experienced this with Tillamook Cheddar several times. It will want to crumble instead of slice. I have kept vac packed Tillamook in the fridge for a couple months, at least, with no loss in quality or other issues.

                    Get yerself a small dorm sized fridge and stuff it in a corner somewhere, just for your projects. I have two that work wonderfully for my projects, and I don't clog up the main fridge... well maybe sometimes I do...
