  • More Jerky

    My neighbor gave me a sirloin tip roast, so I thought it would be good for jerky. Started slicing it and seemed to have a little more fat than I was hoping for, was already committed so I kept going. Hopefully it is ok, used MH jerky seasoning






    Sliced to 1/4"


    Trimmed as much as I could, but quite a bit of marbling I couldn't do much about

      No prob... altho watch your slicing thickness consistancy. This will require you pulling some before others.
      Place on a paper towel and pat to prevent rendered fat pockets on the product.

        It was all done on a meat slicer so 85% are pretty consistent. Some of the pieces that were thinner were from the edge of the roast and I was just going to toss but decided to throw in there as well. This time Ill be home the whole time while smoking so I'll keep an eye on it.

          OK..the pict was kinda deceiving then. Should be fine with the meat tho. Better send me some just in case...

                    Looks excellent! Can't wait to get my venison back from the butcher. Jerky is at the top of my list!

                      Mmmm, don't know why you guys are so against a little fat in jerky.

                      Gives it an added sweetness.

                              If I fill my permits and have extra I might be able to spare a chunk. Or I got a friend who's a size queen and only hunts for antlers, if he gets a couple more I may get one. I see the bag says Henderson if that's where you're at I'm only 2 hours north east.
